Description
Sahyadri Special Rice is a variety born from
a selection of Kolpi rice, locally called ‘Athyanau’. It is semi polished and a
great option as daily rice. Medium size grain and does not stick when
cooked.

Usage info
Soak rice in water for 15-20 mins. Drain the
water. In a cooking pot add rice and water in the ratio 1:3. Cover the pot with
a lid and simmer for 15-20 mins or until the rice is fully cooked.

Store in an airtight container in a cool,
dry place.

Indigenous and heirloom varieties of rice are better than the hybrid, commercial packeted ones available at supermarkets. They are naturally climate and pest resistant, with almost no requirement for chemicals. The Adivasis in the Sahyadri ranges who grow them do not have to buy seeds, manure or pesticides, making it possible for marginal tribal farmers to grow these varieties of rice in remote areas. These grains are nutritionally superior.
